6 sweet peppers

1 quart onions

1 quart celery

1 quart water

4 quarts ripe tomatoes

3 tbsp. salt

2 tbsp. sugar

Dice peppers, onions and celery.  Coarse stalks of leaves and celery may be used.  Add water, cook 20 minutes.  Add tomatoes which have been peeled and cut up, salt & sugar.  Bring to boil, put into hot, sterile jars and process in boiling water baths.  30 minutes/pints, 40 minutes/quarts.
